…For my favorite warm weather dish – caprese salad!! If I sound excited, it’s because I am. When the weather starts to warm up, I crave that delicious combination of sweet tomatoes, fresh mozzarella balls and basil, with a few grinds of salt and pepper, and all drizzled with olive oil and a good vinegar (I know, I know, the vinegar isn’t traditional – but it’s so tasty!). In fact, I was craving it so much, I made it last night even though I didn’t have basil.
I think the reason I love caprese salad so much is because I use a really fantastic vinegar on it. It’s mission fig balsamic vinegar from Big Paw Grub, a company that sells at my local farmers markets (and now via their website, if you’re interested!). All of their vinegars and olive oils are great, but the fig is my personal favorite.
