Winter Garden Gone

I harvested the last of my winter garden this weekend, essentially just the left over carrots. We had so many of them, though, that we’re up to our ears in them. Kind of sad to pull out the dying lettuces, radishes, and cilantro. Didn’t have many pests during the growing season, but now that I can get in to see my chard, I noticed that they’re all full of snail holes. Anyone got any suggestions on what to do with a bushel full of carrots?
